This cosmopolitan Moroccan city used to be a louche interzone where beatnik writers and artists ran wild. Errol Flynn, Ava Gardner, Barbara Hutton, Francis Bacon, Ian Fleming, Mick Jagger, Yves Saint Laurent, Pierre Bergé, Jasper Conran are some of the many famous celebrities to grace this melting pot of civilisations, cultures, religions, art and music. Once considered the coolest spot on the Mediterranean, this oldest Moroccan city has a fresh generation of creatives transforming its atmospheric backstreets with some hot new stamping grounds! The buzz is palpable. And what better place to feel it than the Fairmont Tazi Palace Hotel? About Moroccan Wine
Viticulture in the region of today’s Morocco is believed to have been introduced by Phoenician settlers, and was firmly established in the era of Ancient Rome. Large-scale viticulture was introduced by French colonists after assessing Morocco to have the best natural potential for quality wines due to its high mountains and the cooling influence of the Atlantic. Internationally recognised Château Roslane has produced a special wine for us.

Follow your hunch to the back until you are aboard. Then hurry to where a goblet of wine is kept. Once you have drunk a special potion, you will be able to proceed to Fez where perhaps a delightful reward awaits in the heart of the Medina!

Fez is still the most intact, least modernised medina in the Arab world, making it one of the last bastions of the medieval world. Founded in the 9th century, Fez reached its height in the 13th–14th centuries under the Marinids, when it replaced Marrakesh as the capital of the kingdom. The urban fabric and the principal monuments in the medina – madrasas, fondouks, palaces, residences, mosques and fountains - date from this period. Although the political capital of Morocco was transferred to Rabat in 1912, Fez has retained its status as the country's cultural and spiritual centre. Where does one even begin with Fez? Wandering through its labyrinthine ancient medina with its historic and architectural marvels hidden at every corner is an experience unlike any other. Fez is pure sensory overload. Pungent smells and raucous sounds overwhelm you, as colourful ceramics, glistening leather goods and vibrant carpets duel for your eyes’ attention. For travellers who love to get lost in the kaleidoscopic passageways, Fez is a must! To understand Fez, you have to see the ancient city out of which it was born. Volubilis thrived under Roman rule and grew rich trading the wealth of the land - in particular, olives (some of its ancient presses are still in place). The wonder of Volubilis, as of Fez, does not rest in any one structure, but in the beauty of the location, for this is one of the most gorgeous Roman sites in North Africa. Equally handsome are the riads within the Medina where you will stay. They may be modern and luxurious on the inside but on the outside they connect you to this medieval world in ways that no other ancient city could.

Riads
Our accommodation in Fez is in distinctive historic riads dotted within and around the Medina. The riad is one of two main types of traditional Moroccan houses, often with two or more stories around an interior symmetrical garden centred around a fountain. Riads were the stately city homes of the wealthiest citizens such as merchants and courtiers who were able to build mansions which included interior gardens. The style of these riads has changed over the years, but the basic form is still used in designs today.In many cases, especially for palaces, the gardens were surrounded by a peristyle gallery. Moroccan houses were inward focused, which allowed for family privacy and protection from the weather. This inward focus was expressed with a centrally placed interior garden or courtyard, and the lack of large windows on the exterior walls of rammed earth or mud brick. This design principle also found support in the social mores of Islamic society, which placed great value on privacy and encouraged a separation between private family spaces (where women notably lived and worked) and semi-public spaces where outside guests were received. The central gardens of traditional riads were often planted with fruit trees such as orange trees or lemon trees. The walls of the riads could be adorned with tadelakt plaster, stucco decoration, and zellij tiles, sometimes with Arabic calligraphy and quotes from the Quran.

Tonight we are invited to a gastronomic culinary journey of Morocco in a historic building where on January 11, 1944 the Proclamation of Independence was signed by 66 Moroccans demanding an end to colonialism and the reinstatement of Morocco's independence, an enormous risk at the time. We shall celebrate with fine cuisine and great fanfare the eventual success of the Fez movement that ended The French Protectorate on March 2, 1956 with the Franco-Moroccan Joint Declaration signed in Rabat.

We are to travel into the past to one of the grandest stages of the Roman Empire in North Africa. Dreamers, there is a significant secret from the past waiting to be revealed only to us. As the sun sets over the serene landscape of what may have been the capital of the Kingdom of Mauretania, at least from the time of King Juba II, the son of Juba I and client king of Numidia (30–25 BC) and Mauretania (25 BC – AD 23), a highly successful ruler and a respected scholar and author whose first wife was Cleopatra Selene II, daughter of Queen Cleopatra VII of Ptolemaic Egypt and Roman Triumvir Mark Antony, we shall reflect on the revelation and plan our next steps henceforth!
